Contrary to popular opinion, cooking Indian food doesn’t have to be complicated. There are a few basic rules you can follow to ensure you serve up tasty meals every time. There is also a wide variety of ingredients you need to become familiar with, but as long as you have a well-stocked larder and a little bit of patience, you will soon be creating wonderfully tasty Indian masterpieces.

First up, there’s the spices. Clearly an essential ingredient for anyone cooking Indian food. Go for whole spices rather than the ground variety wherever possible – they hold their flavour for longer and give any dish an enhanced depth. If starting from scratch and if you are relatively new to cooking Indian food, then mustard seeds, cumin seeds and coriander seeds are a good place to start. These spices are best when freshly ground, which you can do yourself. Place the seeds in a hot pan and wait for them to start popping, releasing their aroma and changing colour. This is your cue that they are ready to be ground either in a pestle and mortar or coffee grinder (have one dedicated to the purpose). Read the rest of this entry »

Other customs that play a part include the elaborately decorated statues of Ganesha that appear in many houses. In the UK, the majority of people drink cows’ milk on a daily basis. We have it in our tea, on our cereal, in cheese sauces, milkshakes, ice creams and more. There are alternatives that are available in the West – goats’ milk, soya milk and rice milk, for example. However, think of buffalo milk and our first thought is probably authentic mozzarella cheese, rather than drinking a glass of it.

In India, it is a different story. As the largest producer of buffalo milk in the world, it is very much on the menu here. Other top producers of buffalo milk around the world are Pakistan, China and Italy. If you look at this list you soon realise these are all countries in which people eat healthy diets. And buffalo milk, being low in cholesterol, contributes to this trend. It does, however, have a higher fat content (and thus more calories) than cows’ milk, but in a country where many people work long, hard days this isn’t a bad thing. In the state of Punjab, were many people work the land, buffalo milk is particularly popular. Read the rest of this entry »

Between work, picking up your kids from school and extracurricular activities, exercising, and running errands, there is little time left for you to put together a nice weekday meal. Stopping for take-out or having pizza delivered seems to be the best option because it’s quick, hassle-free, and the clean up is a breeze.

However, although eating take-out is convenient, it is pricey. And, usually, it lacks on nutrition value. To most people, cooking is synonymous with time-consuming and effort. But, with the proper preparation, cooking is no more work than it is to drive-thru a burger joint or fish a hefty tip out of your back pocket for the delivery boy.

There are plenty of recipes that take 30 minutes or less that are simple, convenient, and have a higher nutrition value than fast food. From spaghetti and meatballs to tacos to even a Sargento Cheese and sauerkraut dog, you can easily feed your family in a few minutes.

Using sauerkraut dogs as an example, the key to quick cooking is organization:

Kitchen Tools:

The reason why cooking can feel tedious is because there is a lack of organization in the kitchen. Get to know your kitchen and your kitchen tools in order to be familiar with how they work and when you should use them.

For this dish, you need a knife, a cutting board, and a skillet pan with a lid.

To make a serving of 4, you need these essential ingredients:

4 jumbo all beef franks

4 slices Sargento Natural Sliced Double Cheddar Cheese, sliced diagonally

2 Tablespoons coarse grained or yellow mustard

4 pretzel hot dog rolls or hot dog buns, split, lightly toasted

1 cup sauerkraut, very well drained

Before cooking, be sure you either have all these ingredients or have enough of these ingredients. Nothing can throw a wrench into dinner plans like being without a necessary ingredient.

On a cutting board, slice the jumbo beef franks in half lengthwise being careful not to slice all the way through. You are looking to butterfly the franks, which means splitting the meat almost in two and spreading it out flat like you would an open book.

Next, over medium heat, cook the franks face side down in the skillet, about 4 minutes or until golden brown. Once they have developed a nice sear, flip the franks over, cooking until heated through, about 4 minutes. Place cheese slices over the franks, and cover the skillet with a lid for a couple of minutes so that the cheese can melt. Once melted, pull off the heat.

Take the toasted pretzel buns and spread mustard on each half. Place franks inside of the buns and top with sauerkraut.

These sauerkraut dogs are a filling meal, and average about 405 calories per dog. Compared with a fast food meal of a burger, French fries, and a shake or soda, which can range anywhere from 800-2000 calories, this meal is both satisfying and figure-friendly.

Sargento covered the costs of the ingredients used in this recipe, but the opinions are my own.
