Contrary to popular opinion, cooking Indian food doesn’t have to be complicated. There are a few basic rules you can follow to ensure you serve up tasty meals every time. There is also a wide variety of ingredients you need to become familiar with, but as long as you have a well-stocked larder and a little bit of patience, you will soon be creating wonderfully tasty Indian masterpieces.

First up, there’s the spices. Clearly an essential ingredient for anyone cooking Indian food. Go for whole spices rather than the ground variety wherever possible – they hold their flavour for longer and give any dish an enhanced depth. If starting from scratch and if you are relatively new to cooking Indian food, then mustard seeds, cumin seeds and coriander seeds are a good place to start. These spices are best when freshly ground, which you can do yourself. Place the seeds in a hot pan and wait for them to start popping, releasing their aroma and changing colour. This is your cue that they are ready to be ground either in a pestle and mortar or coffee grinder (have one dedicated to the purpose). Read the rest of this entry »
