The most popular of all Indian sweet breads has to be the Puran Poli. Puran Poli is a traditional sweet flatbread, originating from Maharashtra and nowpopular in the states of Tamil Nadu, Goa, Gujarat, Karnataka and Andhra Pradesh.
The ingredients of Puran Poli vary between each region but typically will include wheat flour, sugar, chana dal, yellow gram, and a number of spices to flavour. The bread is always served warm, and is sometimes served with a spoonful of ghee or with milk that has been sweetened with pistachios and almonds. Contrary to popular opinion, cooking Indian food doesn’t have to be complicated. There are a few basic rules you can follow to ensure you serve up tasty meals every time. There is also a wide variety of ingredients you need to become familiar with, but as long as you have a well-stocked larder and a little bit of patience, you will soon be creating wonderfully tasty Indian masterpieces.
First up, there’s the spices. Clearly an essential ingredient for anyone cooking Indian food. Go for whole spices rather than the ground variety wherever possible – they hold their flavour for longer and give any dish an enhanced depth. If starting from scratch and if you are relatively new to cooking Indian food, then mustard seeds, cumin seeds and coriander seeds are a good place to start. These spices are best when freshly ground, which you can do yourself. Place the seeds in a hot pan and wait for them to start popping, releasing their aroma and changing colour.
